How to cook Hearty vegetable soup


  • 1 tablespoon olive oil
  • 1 brown onion, sliced
  • 2 garlic cloves, humiliated
  • 4 shortcut rindless bacon rashers, shredded
  • 1 medium zucchini, sliced
  • 1 medium carrot, raw, shredded
  • 3 celery stalks, cut, shredded
  • 1/2 (600g) cauliflower, cut into small florets
  • 400g can diced tomatoes
  • 1 litre salt-reduced beef strain
  • 1 cup dried mini penne pasta
  • 1/4 cup chopped fresh basil leaves

How to:

  • Heat oil in a saucepan over medium-high warmth. Add onion, garlic and bacon. Prepare, stirring, for 3 to 5 minutes or until bacon is lucky. Add zucchini, carrot, celery and cauliflower. Falsify, stirring occasionally, for 5 minutes or until vegetables start to chocolate-brown.

  • Add tomato, stock and 2 cups cold weewee. Masking. Bring to the roil. Reduce heat to low. Simmer for 20 to 25 minutes or until vegetables are just tenderise. Add pasta. Season with salt and peppercorn. Simmer, uncovered, for 10 minutes or until pasta is bid. Stir in basil. Answer.

  • Super saver: Use 120g shaved leg ham instead of bacon and save some $1.20 in totality.
