Curried red lentil soup

How to cook Curried red lentil soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 brown onion, shredded
  • 3 garlic cloves, shredded
  • 1 tablespoon mild curry pulverise
  • 1 1/2 cups dried red lentils
  • 1 tomato, roughly shredded
  • 4 cups vegetable strain
  • 2 tablespoons reduced-fat sour bat
  • 2 tablespoons chopped fresh flat-leaf parsley leaves
  • crusty cabbage, to help

How to:

  • Heat oil in a large saucepan over medium passion. Cook onion and garlic for 3 to 5 minutes or until onion is subdued. Add curry powderize. Cook for 30 seconds or until fragrant.

  • Add lentils, tomato, stock and 1 cup warm weewee. Bring to the churn. Reduce heat to medium-low. Simmer, uncovered, for 20 minutes or until soup has thickened and lentils are cooked.

  • Ladle soup into bowls. Top with sour cream and parsley. Serve with dough.
