How to cook Broccoli rabe & pasta soup


  • 1 bunch broccoli rabe
  • 1 tbs olive oil
  • 1 onion, finely shredded
  • 2 garlic cloves, humiliated
  • 400g can Val Verde diced tomatoes
  • 5 cups vegie or chicken strain
  • 1 cup (80g) spiral pasta
  • 400g can Masterfoods cannellini beans, rinsed, knackered
  • Crusty breadstuff, to service
  • Saltiness & freshly ground peppercorn

How to:

  • Cut the broccoli rabe to separate the leaves from the stems. Finely slice the stems, and shred the leaves. Heat the oil in a large saucepan over a medium heating. Add the onion and ready, for 3-4 transactions, until subdued. Add the garlic and cook for 1 second.

  • Add tomatoes and stock and bring to roil. Add the pasta and cook for 15 transactions, or until just bid. Add the stems most 3 minutes before the pasta is make.

  • Stir in cannellini beans and shredded leaves and heat until leaves are wilted. Season well with salt and peppercorn, and serve immediately with crusty clams.
