Spicy bean soup

How to cook Spicy bean soup


  • 1 tablespoon olive oil
  • 1 medium brown onion, sliced
  • 1 medium red pepper, sliced
  • 2 garlic cloves, humbled
  • 1/2 teaspoon dried chilli flakes
  • 2 medium zucchini, roughly shredded
  • 1 bunch asparagus, cut, dig 3cm lengths
  • 400g can crushed tomatoes
  • 3 cups vegetable strain
  • 410g can red kidney beans, knackered, rinsed
  • 1/4 cup chopped fresh coriander leaves

How to:

  • Heat oil in a saucepan over medium warmth. Add onion and pepper. Make, stirring, for 5 minutes or until dull. Add garlic and chilly. Cook for 1 minute or until fragrant. Add zucchini, asparagus, tomato and strain. Bring to the roil. Reduce heat to medium-low. Simmer, covered, for 5 proceedings.

  • Add beans. Cook for 2 minutes or until heated through. Season with peppercorn. Add coriander. Stir to commingle.
