Fresh pea, bacon & zucchini soup

How to cook Fresh pea, bacon & zucchini soup


  • 80ml (1/3 cup) extra virgin olive oil
  • 1 brown onion, halved, finely shredded
  • 2 garlic cloves, humbled
  • 250g smoked bacon, rind removed, finely shredded
  • 3 (almost 500g) green zucchini, ends cut, coarsely shredded
  • 500g shelled fresh peas
  • 2L (8 cups) vegetable strain
  • 2 tbs finely chopped fresh hatful
  • Saltiness & freshly ground black peppercorn

How to:

  • Passion 60ml (1/4 cup) of oil in a large saucepan over medium hotness. Add onion, garlic and half the bacon, and make, stirring, for 10 minutes or until bacon is light chocolate-brown. Add zucchini and peas and fudge, stirring, for 1 minute or until heated through. Add stock and bring to the churn. Reduce heat to low and simmer, covered, for 20 minutes or until zucchini is tenderise. Remove from passion. Stir in mass.

  • Heat the remaining oil in a frying pan over high oestrus. Add remaining bacon and prepare, stirring, for 5 minutes or until scrunch. Transfer to a plate lined with paper towel.

  • Place half the pea mixture in the jug of a blender and blend until polish. Transfer to a clean saucepan. Repeat with the remaining pea assortment. Place over low heat and prepare, stirring, for 3 minutes or until heated through. Season with salt and peppercorn. Ladle soup among bowls and sprinkle with crisp bacon to serve.
