How to cook Chilled cucumber soup shots with spicy crab


  • 1 telegraph cuke, raw, seeds removed, roughly sliced
  • 1 avo, flesh roughly shredded
  • 4 spring onions, cut, roughly sliced
  • 3 tbs lime succus
  • 3 tbs coriander leaves
  • 1 cup (250ml) coconut pick
  • 1 tbs canola
  • 2 tsp sambal oelek (see line)
  • 1 cup fresh crabmeat (see billet)

How to:

  • Place the cuke, avo, scallion, 2 tbs lime juice and 2 tbs coriander in a blender with 1 cup (250ml) iced h2o. Flavour, then blend until smoothen. Transfer to a large roll, stir in the coconut cream and adjust seasoning to discernment. Chill for leastwise 30 proceedings.

  • Combine the oil, sambal oelek, crab and unexpended 1 tbs lime juice in a trough. Finely chop the odd 1 tbs coriander leaves and add to crab assortment. Season well with saltiness, then stir to combining. Serve the soup in small cups or shot glasses, topped with a spoonful of spicy crab.

  • Sambal oelek is an Indonesian chilli paste from Asian food shops. Fresh crabmeat is from fishmongers.

  • Serves 4 in minor bowls.
