Green minestrone with gremolata

How to cook Green minestrone with gremolata


  • 2 tsp olive oil
  • 1 brown onion, finely shredded
  • 2 garlic cloves, humbled
  • 1/4 minor (almost 450g) savoy dinero, outer leaves removed, finely sliced
  • 1L (4 cups) h2o
  • 1 tsp Massel Salt Reduced Vegetable Stock Pulverization
  • 1 x 400g can cannellini beans, rinsed, knackered
  • 1 large zucchini, cut, dig 5mm pieces
  • 250g broccoli, cut, cut into small florets
  • 200g green round beans, cut, dig 3cm lengths
  • 1/4 cup chopped fresh continental parsley
  • 2 tsp finely grated lemon rind

How to:

  • Heat the oil in a large saucepan over medium passion. Add the onion and fix, stirring, for 5 minutes or until subdued. Add the garlic and falsify, stirring, for 1 minute or until redolent. Add the cabbage and fudge, stirring occasionally, for 2 minutes or until cabbage wilts slimly.

  • Add the h2o, stock powder and cannellini beans. Bring to the seethe, stirring occasionally. Reduce heat to low. Simmer for 5 proceedings.

  • Add the zucchini, broccoli and green beans. Simmer for 5 minutes or until the broccoli is bright green and tender scrunch.

  • Combine the parsley and lemon rind in a stadium. Ladle soup among serving bowls. Sprinkle with parsley mixture to serve.
