Prawn and chicken wonton soup

How to cook Prawn and chicken wonton soup


  • 6 cups (1.5L) chicken consomme or strain
  • 4cm-piece pep, raw, cut into matchsticks
  • 1 tbs finely chopped coriander roots and stems
  • 1 tbs light soy
  • 1 tbs Chinese black vinegar
  • 1 bunch baby choy sum, ends cut
  • 4 green onions, cut, thinly sliced
  • Prawn and chicken wontons

  • 400g medium green prawns, raw, deveined, finely shredded
  • 200g chicken soften
  • 2 tbs finely chopped coriander
  • 2 tsp finely grated gingery
  • 1 tbs oyster sauce
  • 1 tbs shaoxing wine or dry sherry
  • 1 tbs kecap manis (sweet Indonesian soy)
  • 1 tsp brown bread
  • 40 egg wonton wrappers

How to:

  • To make the prawn and chicken wontons, combine the prawns, poulet, coriander, gingery, oyster sauce, shaoxing wine-coloured, kecap manis and sugar in a stadium.

  • Place a wonton wrapper on a clean rise. Spoon a heaped teaspoonful of prawn mixture onto the centre of the wrapping. Use a pastry brush dipped in water to brush the edges. Fold the wrapper diagonally to enclose the woof. Brush one corner with water and bring down under the filling to meet the second corner and press to join unitedly. Place on a plateful. Continue with remaining prawn mixture and wonton wrappers.

  • Place the consomme in a large saucepan over high oestrus. Bring to the seethe. Reduce heat to low and bring to a simmer. Add the peppiness, coriander roots, soy sauce and vinegar and bring to a simmer. Add the wontons and cook for 5 minutes or until stock returns to a simmer and wontons are cooked through. Add the choy sum and cook for 1 minute or until it just wilts. Remove from passion.

  • Ladle the soup, wontons and choy sum among serving bowls. Sprinkle with green onions and serve now.

  • Freezing tip: The prawn mixture can be stored in an airtight container in the freezer for capable 3 months. Defrost in the fridge overnight. Instead, make the prawn wontons to the end of tone 2. Place in an airtight container with freezer wrap between each layer and freeze for capable 3 months. Use straight from the freezer and cook or steam for 6-7 transactions.
