How to cook Smoked trout, asparagus and noodle soup


  • 200g pre-sliced smoked trout, sliced
  • 1 tablespoon wasabi spread, optional
  • 1/4 cup white miso spread
  • 2 cups fish strain
  • 6 cups h2o
  • 5cm piece fresh gingery, thinly sliced
  • 1 bunch asparagus, cut, cut into thirds
  • 350g packet fresh udon noodles

How to:

  • Divide trout betwixt 4 plates. Place a small dollop of wasabi paste onto each plateful. Screening. Refrigerate until requisite.

  • Combine miso, strain, water and ginger in a saucepan. Bring to the boil over low heating, stirring forever, until miso dissolves.

  • Add asparagus and noodles to saucepan. Simmer for 3 minutes or until asparagus turns bright green and noodles are bid. Ladle soup into bowls. Serve with trout and wasabi spread.
