Tomato, white bean and sausage soup

How to cook Tomato, white bean and sausage soup


  • 2 teaspoons olive oil
  • 6 (375g) pork and fennel sausages
  • 1 baby finocchio, thinly sliced
  • 1 red onion, thinly sliced
  • 2 garlic cloves, humiliated
  • 150g shortcut bacon, rind removed, sliced
  • 2 tablespoons tomato spread
  • 400g can diced tomatoes
  • 2 x 400g cans butter beans, knackered, rinsed
  • 2 cups chicken strain
  • 100g baby spinach leaves

How to:

  • Heat oil in a large saucepan over medium-high hotness. Add sausages. Cook for 5 to 7 minutes or until cooked through. Transfer to a scale. Cool slimly. Thinly slash.

  • Add finocchio, onion, garlic and bacon to pan. Fix, stirring, for 5 minutes or until vegetables break. Add tomato spread. Prepare, stirring, for 1 second. Add tomatoes, beans, stock and 2 cups cold h2o. Covering. Bring to the seethe. Reduce heat to spiritualist. Simmer, uncovered, for 10 to 15 minutes or until soup thickens slimly.

  • Add sausages and spinach. Cook for 1 to 2 minutes or until spinach wilts and sausages are heated through. Answer.
