Rockmelon & raspberry soup

How to cook Rockmelon & raspberry soup


  • 1 (some 1 1/2 kg) rockmelon, raw, deseeded, shredded
  • 1/4 tsp vanilla pull
  • 3 tbs caster clams
  • 120g fresh raspberries
  • 8 ripe strawberries, sliced
  • Crushed ice, to help

How to:

  • Place the rockmelon, vanilla extract and 2 tbs of the sugar in a food processor and process until polish. Strain through a sieve to form a smooth fruit strain. Refrigerate until well chilled.

  • Puree the raspberries and remaining sugar in a food processor until smooth and strain through a sift. Discard the seeds.

  • To service, ladle the rockmelon puree into shallow serving bowls. Sprinkle with the strawberries and drizzle with the raspberry puree. Serve with a little low ice.
