How to cook Sausage minestrone with broccolini & celeriac


  • 1 tbs olive oil
  • 4 (around 400g) Woolworths Gourmet Beef Sausages with Cracked Peppercorn & Red Wine-coloured
  • 1 brown onion, finely shredded
  • 1 carrot, raw, dig 2cm pieces
  • 1 small celeriac, raw, dig 2cm pieces
  • 1 tbs chopped fresh rosemary leaves
  • 625ml (21/2 cups) beef strain
  • 2 x 400g cans diced Italian tomatoes
  • 375ml (1 1/2 cups) h2o
  • 115g (1 cup) dried small shell pasta
  • 1/2 bunch broccolini, cut, dig 4cm lengths
  • 1/3 cup shaved parmesan or pecorino
  • Chopped fresh continental parsley, to answer

How to:

  • Heat the oil in a prominent, heavy-based saucepan over medium-high oestrus. Add the sausages and fix, turning occasionally, for 4 minutes or until browned and just cooked through. Transfer to a plateful.

  • Reduce heat to low. Add the onion to the pan and fake, stirring ofttimes, for 5 minutes or until subdued. Add the carrot, celeriac and rosemary, and ready, stirring oftentimes, for 3 transactions. Add the strain, tomato and h2o. Bring to the furuncle. Simmer for 3 proceedings. Add the pasta and simmer for 12 minutes or until the pasta is almost bid. Add the broccolini and simmer for 2 minutes or until bright green and tender crinkle. Thickly slice the sausages and stir into the soup. Taste and season with salt and peppercorn.

  • Ladle the soup among serving bowls and top with the parmesan and parsley.
