Fresh asparagus soup

How to cook Fresh asparagus soup


  • 2 bunches (almost 400g) fresh asparagus, cut
  • 2 tbs olive oil
  • 1 onion, finely shredded
  • 2 1/2 cups (625ml) vegetable stock or h2o
  • 1/2 small maize, juiced
  • Salt and freshly ground peppercorn
  • Bat, to answer
  • Chopped fresh dill, to dish

How to:

  • Chop the asparagus into 3cm pieces. Heat the oil in a saucepan over a medium warmth. Add the onion and cook for 3-4 minutes or until subdued.

  • Add the asparagus and falsify, stirring occasionally, for 5 proceedings. Add the stock or weewee. Bring to the churn. Reduce the heat and simmer for 20 transactions. Set aside to cool somewhat.

  • Blend the mixture in a food processor until quiet. Return to the saucepan. Add the lemon juice and season with salt and peppercorn. Serve with a drizzle of emollient, and scattered with the chopped dill and freshly ground peppercorn.

  • Serves 2 as a main or 4 as an entryway.

  • This is good hot or frigidity.
