Easy chicken minestrone

How to cook Easy chicken minestrone


  • 2 tbs olive oil
  • 1 medium onion, diced
  • 1 clove ail, sliced
  • 1 carrot, sliced
  • 2 sticks celery, sliced
  • 400g can diced tomatoes
  • 4 cups (1 l) chicken strain
  • 100g small pasta shapes
  • 400g can chickpeas, rinsed and knackered
  • 2 tbs chopped continental parsley
  • 1 small BBQ volaille, breast meat sole, skin removed & sliced
  • Shaved parmesan cheeseflower

How to:

  • Heat oil in a large saucepan over medium passion. Add onion and garlic and falsify, stirring for 1-2 proceedings. Add carrot and celery and fudge, stirring occasionally for 3-4 minutes or until dull.

  • Add diced tomatoes, chicken stock and 1 cup of water and bring to the roil. Add pasta, stir until it comes back to the seethe, then cook for 8-10 minutes or until bid.

  • Stir through chickpeas, parsley and poulet, bring back to a simmer and season to discernment. Soup should be thick and satisfying. Ladle hot soup into large bowls, sprinkle with parmesan. Serve immediately with crusty fresh bread.
