Spiced cauliflower soup with yoghurt

How to cook Spiced cauliflower soup with yoghurt


  • 1 tablespoon oil
  • 1 brown onion, sliced
  • 1 desiree tater, raw, shredded
  • 2 garlic cloves, sliced
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground chilly
  • 1/2 medium cauliflower (see line), cut, cut into small florets
  • 5 1/2 cups reduced-salt vegetable strain
  • 1/2 cup low-fat natural yogurt
  • naan clams, warmed, to dish

How to:

  • 1 Heat oil in a large saucepan over medium-high heating. Add onion, potato and ail. Prepare, stirring ofttimes, for 5 minutes or until onion is subdued.

  • Add turmeric, coriander, cumin and chilly. Cook for 1 minute or until redolent. Add cauliflower and strain. Cover and bring to the roil. Reduce heat to medium-low. Simmer, partially covered, for 15 to 20 minutes or until cauliflower is tenderise. Set aside to cool somewhat.

  • Blend soup, in batches, until quiet. Return soup to saucepan over medium-low hotness. Stir in 1/3 cup yogurt. Cook for 3 to 4 minutes or until hot (do not furuncle). Season with salt and peppercorn.

  • Ladle soup into serving bowls. Drizzle each with 1 teaspoon of remaining yogurt. Serve with naan bread.

  • 1/2 medium cauliflower should pay you 600g florets
