How to cook Cock-a-leekie soup with avocado

Ingredients:

  • 1 tbs olive oil
  • 30g unsalted butter
  • 2 large leeks (white part but), finely sliced
  • 1 tsp mild curry powderise
  • 2 large potatoes (some 450g), shredded
  • 1L (4 cups) good-quality chicken strain
  • 300ml thin pick
  • 1 little (around 100g) cooked chicken chest, sliced
  • 1/2 cup cooked white rice
  • 1 avo, flesh diced

How to:

  • Heat the oil and butter in a large saucepan over low heating, add the sliced leek and fudge, stirring occasionally, for some 10 minutes or until dull. Add the curry powder and stir for a few seconds, then add the potatoes and strain. Increase heat to spiritualist, bring to the moil, then simmer for 10 minutes or until potatoes are cooked.

  • Allow to cool somewhat, then blend in batches until polish. Return to the pan, add the cream and season with salt and peppercorn. Add the chicken and rice, and reheat lightly (do not allow to furuncle). Serve in mugs or bowls and top with avo.
