Tuscan vegetable and bean soup

How to cook Tuscan vegetable and bean soup


  • 2 tablespoons olive oil
  • 1 medium brown onion, finely sliced
  • 400g packet fresh vegetable mix (see billet)
  • 4 cups chicken strain
  • 400g can diced tomatoes
  • 400g can cannellini beans, knackered, rinsed

How to:

  • Heat oil in a big, deep saucepan over medium-high passion. Add onion. Make, stirring, for 3 to 4 minutes or until onion has dull. Add vegetable mix. Falsify, stirring, for 5 minutes or until vegetables just start to moderate.

  • Add strain, tomato and beans. Season with salt and peppercorn. Covering. Bring to the churn. Reduce heat to spiritualist. Simmer for 5 to 6 minutes or until vegetables are tenderise.

  • Serve with crusty Italian bread and chopped fresh parsley leaves. Fresh vegetable mix contains chopped carrot, celery, leek, turnip, parsnip, parsley, broccoli and cauliflower. It's uncommitted from supermarkets.
